These air fryer zucchini chips crisp up evenly, are much quicker than the oven, and make a delicious, naturally low carb snack.

Ingredients For Air Fryer Zucchini Chips

Basic ingredients:
- Zucchini – Look for a firm dark green zucchini that doesn’t have any nicks or cuts on it. The thickness doesn’t matter — any will do!
- Olive oil – Use extra virgin olive oil for best flavor.
- Sea salt & black pepper

Can you make air fryer zucchini chips without breadcrumbs?
Yes! While many zucchini chips are made with breadcrumbs, this recipe doesn’t use any so they get nice and crunchy… AND they are less work to make. If you are looking for breaded zucchini, check out my pan fried zucchini slices (or sauteed zucchini for a breading-free variation).

How To Make Zucchini Chips In The Air Fryer

- Slice zucchini. You want it about 1/8 inch thick.
TIP: Use a mandoline for slicing! This will ensure that your zucchini chips are even thickness and get crispy. It’s hard to slice that thinly using a knife.

- Dry. Use a paper towel to pat any excess liquid off of the zucchini slices.

- Season. Toss zucchini slices with olive oil, sea salt, and black pepper to evenly coat the slices.

- Air fry zucchini chips. Place zucchini slices in a single layer and cook in the preheated air fryer. Start checking zucchini slices after 8 minutes.
TIP: Don’t crowd the air fryer. Cook in batches so that you don’t crowd the zucchini slices in the air fryer, or they won’t get browned and crispy.


Storage Instructions
Store leftover air fryer zucchini slices in an airtight container for 2-3 weeks in your pantry. If they get soft, you can crisp them up again in the air fryer for a couple of minutes.

Instructions

Use a mandoline to slice zucchini into 1/8 in (0.3 cm) thick slices.

Pat any excess liquid off of the zucchini slices with a paper towel.

Preheat air fryer to 325 degrees F (162 degrees C).

In a medium bowl, combine the zucchini slices, olive oil, sea salt and pepper. Toss until all slices are coated.

Place the zucchini slices in a single layer in the air fryer. Cook for 8-12 minutes. Check at the 8 minute mark and remove any slices that are browning/crisping. Continue to check every couple of minutes until all slices are done. Repeat with all zucchini slices. Zucchini will crisp up a more while cooling.

0This recipe didn’t work for me. They did not get crispy but maybe I sliced them too thin or had too much olive oil. I’m trying the oven recipe though as well so maybe that will come out better!

0I just hand cut them as thin as I could, as I don’t have a mandolin. Most were not crispy but they were so delicious and addictive! No dip needed. Love your recipes. Will make these again.

0I had to up the temp in my air fryer, but these turned out great and were just what I was looking for. I’ve baked them and deep fried before, but never air fried. I do variations. Today, I used pancake mix with some sugar and salt added because I was in the mood for something sweet. I think rosemary, garlic and thyme will be what I do when I want something savory. Thanks for the recipe!

0Great flavor….only did the basic recipe but all the chips flew around like butterflies in my fryer. Any ideas on how to prevent this? LOL! For my grilled cheese sandwiches, it was recommended to put a toothpick through the bread. I don’t think this would be feasible for chips.

0Hi Laura, you might have better luck layering another rack over the chips to weigh them down or keep them more secure under the heating element. Let me know if you try it!

0Well dang. These just didn’t work for me. Wouldn’t get crisp. Nice flavor though. It WAS the first thing I’ve done in my brand new Cuisinart air fryer so I’m sure it was a user error.

0Just not worth the effort! The slices got blown around in the air fryer and I had to keep unfolding them and putting back in place. Plus could only do small batches at a time. I think it would be much easier to do a large batch all at once in the oven and they wouldn’t blow around.

0Hi Ann, I didn’t have this issue with my air fryer, but if yours has this issue, you could put a wire rack on top of the chips to keep them from blowing around. If you want an oven version, you can make baked zucchini chips like this. They are more crispy in the air fryer, though.

0I tried this recipe in the air fryer, and they didn’t come out crispy at all. Very disappointed since I’m always looking for delicious alternatives to potato chips. I sliced them with our mandolin, squeezed out the water, etc. ???

0Hi Cindy, I haven’t experienced this, but if this happens, I recommend just letting them go because opening the basket will let all the heat out.
